i think the bread and fat maybe a bit overrated, the truffle in the butter is such a basic dish, not sure if i would like to spread that on oven warm bread. instead, get the pork rillettes.

It's a splurge but well worth it if nuance and high-quality intrigues your palette. Locally sourced ingredients. Call for reservations outside of off-season (winter).

Stopped in for a couple cocktails and a bite with the ladyfriend. Patrick is a magician with the drinks, easily among the best I've had anywhere, and without the pretension of big city craft bars.

Absolutely AMAZING!!! My hubs & I cannot agree on food & are super picky eaters-after reading about thistle online, we decided to go w the chefs whim w the only restriction being meat-OMG fave in OR!

On the way back to Portland, veer off at McMinnville and drop in at Thistle. Chef Eric Bechard sources everything local and his preparations are divine.
